Dr. Richard Wallace, Chemistry, attends NSF Sponsored Food Chemistry Workshop
Dr. Richard Wallace, chemistry, was selected to attend the National Science Foundation, Chemistry Collaborations, Workshops & Community of Scholars Food Chemistry workshop . The workshop, for university faculty members, was held from July 14-19, 2013 in Dubuque, Iowa. The Food Chemistry workshop was geared to meet the needs of science educators working to design their own course in Food Chemistry as well as those who wish to incorporate the chemistry of food into more traditional courses. The workshop provided the participants with a basic understanding of the connections between chemistry, food and cooking as well as strategies to incorporate food into the chemistry curriculum. Dr. Wallace and Ms. Suzanne Carpenter teach an Advanced Topics in Organic Chemistry - Food Chemistry course each year as part of the chemistry curriculum.
